Thai Style Cucumber Salad |

| Ingredients (makes four servings) |
| ** 4 medium cucumbers |
|
** 2 cups rice or white vinegar |
| ** ¼ cup diced onion |
|
** 1/3 cup sugar |
| ** 2 fresh red chilies (to taste) sliced thin |
|
** 1 tsp salt |
| ** 2 tbsp. Chinese parsley for garnish |
|
|

| Preparation |
- Boil vinegar, sugar, and salt until dissolved.
- Cool and pour over cucumbers, Garnish with Chinese parsley.
- This dish can be kept in the refrigerator for 1 to 3 days or served right away.
